Wash the dried mushrooms with water, rest them in bowl for 15 to 20 minutes to become soften; do not soak mushrooms in water to avoid loosing the nature flavor.
Using cooking scissors to cut the mushrooms may be more convenient for some people.

Users fingers to press on the mushroom's cap; the firm and bouncy ones are better ones;
under the mushroom cap, it should be in either light yellow or golden yellow color, if it has turned brown or white, it meant the quality has deteriated;
when you smell mushrooms, they hould have light aroma, if not, the quality may have been deteriated.
